This is a cute little dinner recipe that wraps hard boiled eggs in mince then in puff pastry. The leftovers are great cold too.

Serves: 4 

  • 500g beef mince
  • 2 cups mixed vegetables
  • 1 teaspoon beef stock powder
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, diced
  • 1 onion, finely diced
  • 2 hard boiled eggs
  • 1 raw egg
  • 1 sheet puff pastry

Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Preheat the oven to 220 degrees C. Lightly oil a baking tray.
  2. Combine the mince, mixed vegetables, beef stock, Worcestershire sauce, garlic and onion.
  3. Lay out the sheet of puff pastry, layer on the mince then add the whole eggs. Roll the puff pastry to create a contained parcel.
  4. Bake in the preheated oven for 10 minutes, then reduce to 180 degrees C and cook for a further 15 minutes.
