Lebanese Style Tabbouleh

    The main difference about this style of tabbouleh is that it is a parsley and mint salad and not a bulgur wheat salad. Serve with pita bread and lemon wedges.

    Serves: 4 

    • 2/3 cup bulgur wheat
    • 2 large ripe tomatoes, peeled, seeded and diced
    • 1 bunch Continental parsley, chopped
    • 1 bunch fresh mint, chopped
    • 3 spring onions, sliced
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon lemon juice
    • salt and freshly ground black pepper, to taste

    1. Soak the bulgur wheat in boiling water for 20 minute, drain.
    2. In a bowl combine the tomatoes, herbs, spring onions and bulgur wheat. Sprinkle with olive oil and lemon juice and toss well. Season with salt and pepper.
