Avocado, Tomato and Crab Salad

Crab meat is expensive but because it is so rich a little goes a long way, making this crab salad perfect for a buffet table or large dinner party.

- 3 cups crab meat
- 2 cups peeled and seeded tomatoes, diced
- 2 cups avocado, diced
- juice of 1 lime
- 2 cups mayonnaise
- salt and freshly ground pepper, to taste
- 1 hard boiled egg, finely diced
- dill sprigs, to garnish

- Combine the crab meat, tomatoes, avocado, lime juice, mayonnaise, salt and pepper to taste. Mix well.
- Arrange the salad on a serving plate and sprinkle with the diced egg. Garnish with dill sprigs.
