Penne with Cream and Smoked Salmon

    This is a simple pasta recipe but the smoked salmon makes it fancy enough to serve at a dinner party and impress the guests.

    Serves: 4 

    • 350g penne
    • 25g butter
    • 150g cream
    • 115g smoked salmon, cut in 5mm strips
    • 2 sprigs thyme
    • salt and pepper, to taste

    1. Put the penne pasta on to cook while preparing the sauce.
    2. Melt butter then stir in the cream. Add one quarter of the salmon, the thyme, salt and pepper. Heat gently for 3 to 4 minutes, do not boil.
    3. Drain the pasta and stir into the sauce. Serve into 4 bowls then garnish with the remaining salmon.
