Moroccan Orange and Olive Salad

    This ususual Moroccan salad combines oranges with a spicy vinaigrette and pitted black olives for a true taste sensation.

    Serves: 4 

    • 3 large seedless oranges
    • pinch cayenne
    • 1 teaspoon paprika
    • 1/2 teaspoon garlic
    • 3 tablespoons olive oil
    • 1 tablespoon vinegar
    • salt and freshly ground black pepper, to taste
    • 1/3 cup parsley, chopped
    • 12 pitted black olives

    1. Peel the oranges and remove all the white pith. Segment and cut each segment in half. Set aside.
    2. In a salad bowl, whisk together the cayenne, paprika, garlic, olive oil, vinegar, salt and pepper. Add the oranges, parsley and olives. Toss to blend and serve at room temperature.
