Mayonnaise Free Potato Salad Dressing

    I find most potato salad dressings to be overly heavy on the mayonnaise. This recipe uses the same piquant flavours but with just a little cream.

    Serves: 4 

    • 1 egg yolk
    • 3 teaspoons Dijon mustard
    • dash hot pepper sauce, such as Tabasco(TM)
    • 1/2 teaspoon garlic, finely diced
    • salt and freshly ground pepper, to taste
    • 1 teaspoon vinegar
    • 1/2 cup olive oil
    • 2 teaspoons lemon juice
    • 1 teaspoon cream

    1. In a bowl combine the egg yolk, mustard, hot pepper sauce, garlic, salt, pepper and vinegar. Beat with a wire whisk to blend. Still beating, slowly add the oil. Whisk until thickened and well blended.
    2. Add the lemon juice and heavy cream and beat in. Taste and adjust salt and pepper as needed.
