Tomato and Quinoa Salad

    A simple enough quinoa salad with tomatoes, peas and capsicum simply dressed with mayonnaise and fresh herbs. Very tasty.

    Serves: 6 

    • 1 cup quinoa
    • 2 cups water
    • 2 tomatoes, peeled and diced
    • 1 1/2 cups green peas, cooked
    • 1 green capsicum, finely diced
    • 1/4 cup spring onion, finely sliced
    • 1/2 cup mayonnaise
    • 1 tablespoon fresh basil, chopped
    • 1 tablespoon fresh mint, chopped
    • salt and freshly ground black pepper, to taste

    1. Place the quinoa and water in a saucepan and bring to the boil. Turn the heat down to a simmer, cover and simmer 20 minutes until the water has been absorbed. Fluff with a fork and let cook.
    2. In a serving bowl, combine the quinoa, tomatoes, peas, capsicum and spring onion. Add the mayonnaise, herbs and salt and pepper to taste and toss.
