Avocado and Fennel Salad

    A very classy avocado and fennel salad which is perfect in summer. Use fresh green peas if you can get them, they are miles better than frozen.

    Serves: 4 

    • 6 tablespoons extra virgin olive oil
    • 1 tablespoon white wine vinegar
    • pinch white sugar
    • 1/2 bunch fresh mint, chopped
    • 300g green peas
    • 300g mixed salad greens
    • 1 fennel bulb, trimmed and thinly sliced
    • 2 ripe avocados, peeled and diced

    1. Make the dressing: in a large serving bowl combine the olive oil, vinegar, sugar and half the mint. Stir well.
    2. Boil the peas for 2 minutes or until they are just done but not soft. Drain and put them in the bowl with the dressing. let them marinate at least 1 hour.
    3. Just before serving, stir in the salad greens, fennel and avocado. Sprinkle with the rest of the mint.
