Chocolate Filling for Macarons

    This ganache chocolate filling is intended for filling French or Italian macaron sandwich biscuits. Only a few ingredients and so good!

    Makes: 30 macarons (filled)

    • 200g good quality dark chocolate
    • 1 teaspoon instant coffee
    • 190g thickened cream
    • 50g unsalted butter, softened

    1. Break up the chocolate into a bowl. Heat the cream with the instant coffee until almost boiling then pour over the chocolate. Stir with a wooden spoon until smooth. Add the butter and stir in until glossy.
    2. Let cool but don't let it harden! Transfer to a piping bag and pipe onto one macaron shell then top with another. Remember macarons taste best after being refrigerated 24 hours.
