Easter Bunny Biscuits

    Who says gingerbread biscuits always have to be for Christmas? Find yourself a bunny-shaped biscuit cutter and they are for Easter too!

    Makes: 30 biscuits

    • 100g butter
    • 1 1/2 cups white sugar
    • 1/2 cup molasses
    • 1 1/2 tablespoons ground ginger
    • 1/2 tablespoon ground cloves
    • 1/2 egg
    • 1 tablespoon bicarb soda
    • 1/2 cup thickened cream
    • 4 1/2 cups flour

    1. In a saucepan, melt the butter then stir in the sugar, molasses, ginger and cloves until well combined.
    2. Add the egg and bicarb soda and stir. Add cream and stir until well blended.
    3. Remove from the heat and stir in flour to make a firm dough. You might need to use your hands. Cover in plastic wrap and chill a few hours or overnight.
    4. On a floured surface, roll out the dough to 5mm thickness. Cut out biscuits and place on greased baking trays. Bake at 180 degrees C for about 5-8 minutes. Decorate if desired.
