Lemon Peanut Cookies

    These peanut cookies are a bit like meringues as they are mostly egg whites and sugar. You could also use hazelnuts instead of peanuts.

    Makes: 16 cookies

    • 4 egg whites
    • 3/4 cup white sugar
    • 2 cups unsalted peanuts, roughly diced
    • 2/3 cup candied lemon peel

    1. Preheat oven to 120 degrees C. Line a baking tray with baking paper.
    2. Place egg whites and sugar in a bowl over a saucepan of simmering water. Beat until stiff and glossy, about 5 minutes. Remove bowl from water and keep beating until cool. Fold in the chopped nuts and candied peel.
    3. Using a teaspoon scoop up dollops of the mixture and drop on the baking tray, about 5cm apart. Bake until set but not browning, about 15 minutes. Let cool on wire racks.
