    Ingredients
    Makes: 1 cake

    • Cake
    • 100g butter, softened
    • 200g caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 225ml sour cream
    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 500g rhubarb, peeled and sliced
    • Crumble topping
    • 1 cup (125g) plain flour
    • 100g caster sugar
    • 100g butter, cubed
    • 1 teaspoon ground cinnamon

    Directions

    1. Preheat oven to 180 degrees C. Grease and flour a 25cm springform cake tin.
    2. Cream the butter and sugar together, beating about 3 minutes. Add the egg and vanilla and beat well. Add sour cream and beat until combined.
    3. Sift together the flour, baking powder, bicarb soda and salt then beat into the butter mixture. Stir in half the rhubarb.
    4. Pour the batter into the springform tin. Sprinkle remaining rhubarb on top.
    5. Make the crumble topping: mix the flour and sugar together then rub in the butter to a crumb consistency. Sprinkle the topping over the cake, then dust with cinnamon.
    6. Bake 1 hour, or until a skewer comes out clean. Let cool in the tin before slicing.
