Honey Blackberry Cordial

    Blackberry cordial is a lot quicker to make than most, requiring only a couple of weeks. This recipe is also delicious drizzled over plain ice cream.

    Makes: 1 bottle cordial

    • 4 cups blackberries
    • 3 cups brandy
    • honey, to taste

    1. Place the blackberries in a large glass jar with a lid and squish them lightly so they just start to give up juice but don't break apart.
    2. Pour in the brandy and seal the jar. Let infuse one week in a cool dark place, shaking gently each day. Strain the liquid into a sterilised bottle.
    3. Warm up the honey so it is very runny, then add to the cordial to taste. Seal the bottle and let mature at least a week before drinking.
