For such a simple recipe you will be delighted with the elegant and complex flavour. A sprinkling of cinnamon over the top of this lassi makes it special.

  • 4 apricots, pitted
  • 1 banana
  • 1/2 cup almond or soy milk
  • pinch cinnamon

  1. Place the apricots, banana and milk into a bender and puree until smooth. Pour into a glass and sprinkle over the cinnamon.
