Savoury Sausage Casserole

A favourite from my childhood, this recipe has been handed down and around for years. Some of the ingredients seem a bit weird but it works.

Serves: 6 

  • 500g sausages
  • 1 cup grated carrot
  • 1 onion, sliced
  • 2 cups hot water
  • Sauce
  • 1/4 cup of cold water
  • 2 tablespoons flour
  • 1 teaspoon of curry powder (Keens)
  • 2 teaspoons brown sugar
  • 1 tablespoon tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon vinegar
  • salt, to taste
  • 6 drops Parisian essence, if available

Preparation:10min  ›  Cook:1hour15min  ›  Ready in:1hour25min 

  1. Preheat the oven to 180 degrees C.
  2. Boil the sausages and drain, remove skins if they haven't fallen off then cut into bite size pieces.
  3. In a large frypan saute the onion and carrot then add the sausages to brown.
  4. In a bowl combine the sauce ingredients. Add the mixture to the frypan stirring constantly. When it starts to thicken add the hot water.
  5. Transfer to a casserole dish then cook for up to an hour then serve.
