Stuffed Mushrooms

    These are great stuffed mushrooms that a friend's mum used to make and I had to get her recipe. They can be a bit time consuming but worth the effort.

    Makes: 24 stuffed mushrooms

    • 2 rashers bacon
    • 1 onion
    • 1 stalk celery
    • 1 capsicum
    • 1 small carrot
    • 24 medium size mushrooms, stalks removed and reserved
    • 1 cup grated cheese
    • 150ml sour cream

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Finely dice the bacon, onion, celery, capsicum, carrots and mushroom stalks.
    2. Saute in a saucepan until the vegetables are soft, stir in the sour cream and cheese and continue to heat until the cheese has melted.
    3. Add the stuffing in a heaped fashion to each mushroom then place on a baking tray. Place under a medium grill and cook until the top starts to brown, about 5 minutes.

    These were very tasty. Not sure what medium grill means in the states, so I baked these @350F for about 30 minutes. If this meant broiling.. 5 minutes wouldn't have been nearly enough time  -  07 Apr 2015
