Marzipan Jam Cookies

    These fancy cookies are made with a marzipan dough which is then topped with marzipan paste and raspberry jam. You can also cut them into diamond shapes if you like.

    Makes: 18 cookies

    • 125g butter, softened
    • 1/4 cup white sugar
    • 1 egg yolk
    • 1/2 cup plus 3 tablespoons marzipan
    • 1 1/2 cups flour
    • 1 egg white
    • raspberry jam, as needed

    1. Cream the butter, add the sugar, egg yolk and 3 tablespoons marzipan. Beat in the flour. Preheat the oven to 180 degrees C and grease baking trays.
    2. Mix together the remaining marzipan and egg white until it is smooth enough to use through a pastry tube.
    3. Roll out the cookie dough to about 5mm and cut with a round cookie cutter. Place on baking trays. Using the pastry tube make a circle of marzipan on each cookie and fill the centre with jam.
    4. Bake 15 minutes.
