Walnut Finger Biscuits

    These are very elegant biscuits from Switzerland. They combine ground walnuts and almonds with spices and a dash of cognac.

    Makes: 16 biscuits

    • 1 cup ground walnuts
    • 1 cup ground almonds
    • 1/2 cup flour
    • 3 tablespoons white sugar
    • 1 teaspoon orange zest
    • 1/4 teaspoon allspice
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon cinnamon
    • 1/2 cup glace fruit, chopped
    • 1 egg white, beaten to stiff peaks
    • 1 tablespoon honey
    • 1 tablespoon cognac
    • Glaze
    • 2 tablespoons icing sugar
    • 1 tablespoon water
    • 1 tablespoon cognac

    1. Preheat the oven to 160 degrees C.
    2. Combine the ground nuts, flour, sugar, zest, spices, glace fruit and egg white. Add the honey and cognac and mix well with your hands.
    3. Shape the dough into a rectangle about 8cm x 30cm. Cut into fingers, each about 2cm thick. Place on a greased baking tray. Bake for 30 minutes.
    4. To make the glaze, combine the sugar, water and cognac. Brush over the biscuits and let dry.
