Iced Vanilla Biscuits

    There's no trouble making the icing with these biscuits, you simply place a few chocolate chips on top after they have baked and let them melt.

    Makes: 40 biscuits

    • 125g butter
    • 125g margarine
    • 1 cup white sugar
    • 2 cups (250g) plain flour
    • 1/2 teaspoon bicarb soda
    • salt, to taste
    • 1 teaspoon vanilla essence
    • 1 cup white chocolate chips

    1. Preheat oven to 180 degrees C.
    2. Cream together the butter, margarine, sugar and vanilla.
    3. Sift together the flour, bicarb soda and salt. Add to sugar mixture and mix well, being careful not to over mix.
    4. Drop heaping teaspoonfuls of dough on ungreased baking trays and flatten each slightly.
    5. Bake for 13 to 15 minutes. After each tray is removed from the oven, carefully place 5 or 6 white chocolate chips on top of each biscuit while they are still hot. When chocolate melts, spread with a knife.
