Very simple biscuits to make and sure to be a big hit with anyone who loves macadamia nuts! There are only five ingredients which makes them quick to throw together.

Makes: 24 biscuits

  • 1 1/2 cups (185g) plain flour
  • 1/2 cup (125g) butter, at room temperature, cubed
  • 1/2 cup (110g) dark brown sugar
  • 2 teaspoons instant coffee powder
  • 1/4 cup (30g) macadamias, chopped

  1. Lightly grease 2 large baking trays. Preheat oven to 160 degrees C. Sift flour into a bowl and add the butter. Reserve 1 tablespoon sugar; add remainder and the instant coffee.
  2. Rub mixture together until it resembles large breadcrumbs. Mould into small balls. Roll each ball in chopped macadamias.
  3. Space the balls well apart on the baking trays and flatten with the bottom of a glass dipped in the reserved sugar.
  4. Bake for 20–30 minutes or until the edges are lightly browned. Leave to cool a little before lifting onto a wire rack to cool completely.
