Easy Vietnamese Dipping Sauce (Nuoc Cham)

    This classic, spicy Vietnamese dipping sauce, nuoc cham, is a must when serving warm spring rolls.

    Serves: 4 

    • 2 cloves garlic, peeled
    • 2 bird's eye (Thai) chillies, stems removed
    • juice of 1 lime
    • 1 tablespoon white sugar
    • 1 tablespoon rice wine vinegar
    • 4 tablespoons warm water
    • 4 tablespoons fish sauce
    • 1 small carrot, cut into thin strips

    1. In a mortar and pestle, pound together the garlic and chillies. Add the sugar, lime juice, vinegar, water and fish sauce. Whisk together until sugar is dissolved. Just before serving, a some carrot strips for colour.

    What a great recipe! I love this sauce, it is now my fave dipping sauce. I used normal green chillies instead of birdseye chillies and I used lemon instead of lime, but it was still beautiful.  -  27 Dec 2014  (Review from Allrecipes UK & Ireland)
