Perfect as a side dish or a healthy vegetable main, this recipe for Mediterranean baked vegetables is easy to prepare and tastes great.

Serves: 4 

  • 2 large zucchinis, sliced
  • 1 punnet of cherry tomatoes
  • 1 capsicum, diced
  • 1 onion, largely diced
  • 1 cup quartered mushrooms
  • olive oil
  • salt and pepper, to taste
  • 1/2 cup white wine

Preparation:20min  ›  Cook:45min  ›  Ready in:1hour5min 

  1. Dice all the vegetables and add to a casserole dish with the oil, salt, pepper and wine. Put the lid on the casserole dish.
  2. Bake in an oven at 180 degrees C for 45 minutes or until all the vegetables are soft.
