Leek Flan

    I'm not sure what the difference is between a leak pie and a leek flan but in my family this recipe has always been known as leek flan.

    Serves: 6 

    • 20g butter
    • 3 leeks, washed and diced
    • salt and black pepper, to taste
    • 3 eggs
    • 1 cup (250ml) cream
    • 1 1/4 cups (155g) grated cheese
    • shortcrust pie pastry shell

    Preparation:10min  ›  Cook:40min  ›  Extra time:10min resting  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C.
    2. Melt butter in a large saucepan over medium heat. Stir in the leek and satue while stirring until soft; about 10 minutes. Season with salt and pepper.
    3. Whisk together the eggs and cream then stir in the cheese and softened leeks. Pour mixture into prepared pastry shell.
    4. Bake in preheated oven for 30 minutes or until set and golden on top. Allow to sit 10 minutes before cutting into wedges.
