I'm not sure what the difference is between a leak pie and a leek flan but in my family this recipe has always been known as leek flan.
3 leeks, washed and diced
salt and black pepper, to taste
1 cup (250ml) cream
1 1/4 cups (155g) grated cheese
shortcrust pie pastry shell

- Preheat oven to 180 degrees C.
- Melt butter in a large saucepan over medium heat. Stir in the leek and satue while stirring until soft; about 10 minutes. Season with salt and pepper.
- Whisk together the eggs and cream then stir in the cheese and softened leeks. Pour mixture into prepared pastry shell.
- Bake in preheated oven for 30 minutes or until set and golden on top. Allow to sit 10 minutes before cutting into wedges.
This is a popular dinner in our house. Haven't had the recipe fail yet.
