Hash is a great way to use up leftovers. This recipe uses leftovers from a roast. Sometimes I think I only cook roasts for the hash the next day.
1 potato, boiled and diced
- Cut all the leftovers up into even cubes.
- In a saucepan melt the butter. Fry the diced potato until it starts to brown then add the diced vegetables and meat. Stir regularly being wary it doesn't stick.
- Finally add the gravy to add some moisture. When heated through serve.
Leftovers never tasted so good.
