Chicken and Vegetable Soup

    The simple things in life can be the best, like this easy chicken and vegetable soup recipe. Really I just use up whatever is left in the fridge but have put down a few vegetables to match the picture.

    Serves: 4 

    • 1 litre box chicken stock
    • 1/2 teaspoon thyme
    • 1 onion, diced
    • 2 carrots, sliced
    • 1/2 cabbage, sliced
    • 2 stick celery, sliced
    • 1 zucchini, diced
    • leftover chicken, diced

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Put on a saucepan with the chicken stock and thyme, when it is to the boil reduce the temperature so it simmers then start adding vegetables.
    2. Cut the vegetables in order that they take to cook, for example carrots take a long time so cut them first and add. While they are cooking you are cutting a zucchini which don't take as long. You preparing while cooking so it takes the least amount of time possible.
    3. Once all the vegetables are cut and in, add the chicken, this will mean it is still firm when you serve.
