Stir Fry Chicken with Cashews

    This is a quick to make at home stir fry recipe that is is as good or better than what you can get at the local Chinese restaurant.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 4 skinless, boneless chicken breast halves, diced
    • 1 large onion, sliced
    • 1 red capsicum, sliced
    • 1 green capsicum, sliced
    • 4 sticks celery, sliced
    • 1/4 cabbage, sliced
    • 1 tablespoon oyster sauce
    • 1 tablespoon soy sauce
    • 1/3 cup chicken stock
    • 1 teaspoon chilli sauce
    • 1 teaspoon, diced ginger
    • 3 cloves garlic, crushed
    • 1/2 cup unsalted cashew nuts

    1. Heat the oil in a wok or frypan over medium heat then cook the chicken until cooked through. Remove from the wok.
    2. Heat more oil in a wok or frypan over medium heat then cook the onion, capsicum, celery and cabbage until becoming tender. Add the ginger and garlic, stir to combine.
    3. Mix in the oyster sauce, soy sauce, chicken stock, chilli sauce, bring to the boil. Return the chicken and add the cashew nuts. Cook for a further 2 minutes then serve with rice.
