Easy White Asparagus

    White asparagus is a seasonal treat that can be enjoyed on its own or with hollandaise sauce and chives.

    Serves: 2 

    • 1 bunch white asparagus
    • pinch salt
    • pinch sugar
    • 1 tablespoon butter

    1. With a vegetable peeler, peel the asparagus from top to bottom then cut off the woody ends with a knife and discard.
    2. Bring a large saucepan of water to the boil. Add the salt, sugar and butter. Return to a simmer and add the asparagus. Simmer uncovered over low heat 15-20 minutes, checking with a knife to see if the asparagus is tender.
    3. Drain and serve.
