    A simple, healthy and very tasty pumpkin salad recipe that features cherry tomatoes, cucumber and peas with a basic balsamic vinaigrette.

    Ingredients
    Serves: 4 

    • 300g pumpkin, grated
    • 1 head lettuce, leaves torn
    • 1 small red onion, thinly sliced
    • 100g cherry tomatoes, halved
    • 1 cucumber, sliced
    • 100g green peas (tinned or cooked)
    • salt, to taste
    • 2 tablespoons parsley, to garnish
    • Vinaigrette
    • 1/4 cup balsamic vinegar
    • 1 tablespoon extra virgin olive oil

    Directions

    1. In a large mixing bowl combine all ingredients except the parsley and vinaigrette. Mix well and distribute on 4 plates. Sprinkle with parsley.
    2. In a small bowl combine vinegar and olive oil. Drizzle over the salad.
