A green bean salad is the perfect accompaniment to almost any meats but especially beef and fish. This is simplicity itself to put together.
450g green beans, trimmed
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon Parmesan cheese, grated
1/4 cup slivered almonds, toasted
1/4 cup red onion, diced
1/4 cup cherry tomatoes
salt and pepper, to taste
- Boil 3cm of water in a saucepan, add the beans then cover and steam 2 minutes. Drain and rinse beans with cold water. Place in a salad bowl.
- Drizzle beans with olive oil and lemon juice and mix well. Add Parmesan, almonds, onions and tomatoes. Season with salt and pepper and toss.
