Bean Salad

    A green bean salad is the perfect accompaniment to almost any meats but especially beef and fish. This is simplicity itself to put together.

    Serves: 4 

    • 450g green beans, trimmed
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon lemon juice
    • 1 tablespoon Parmesan cheese, grated
    • 1/4 cup slivered almonds, toasted
    • 1/4 cup red onion, diced
    • 1/4 cup cherry tomatoes
    • salt and pepper, to taste

    1. Boil 3cm of water in a saucepan, add the beans then cover and steam 2 minutes. Drain and rinse beans with cold water. Place in a salad bowl.
    2. Drizzle beans with olive oil and lemon juice and mix well. Add Parmesan, almonds, onions and tomatoes. Season with salt and pepper and toss.
