Thai Salad

    A Thai salad is very different from a Western salad and usually features beef and hot chillies. You will find the flavours are very assertive and addictive.

    Serves: 4 

    • 2 cloves garlic, finely diced
    • 2 Thai chillies, finely diced
    • 1/3 cup lime juice
    • 1 tablespoon water
    • 1 tablespoon soy sauce
    • 1 teaspoon brown sugar
    • 3 tablespoons vegetable oil
    • 4 cups lettuce, torn
    • 1 cup snow pea sprouts
    • 1/2 cup carrot, grated
    • 1/2 cup basil leaves, torn
    • 1/2 cup mint, finely diced
    • 1/2 cup coriander
    • 450g porterhouse steak
    • salt and pepper, to taste

    1. In a small bowl, combine the garlic, chillies, lime juice, water, soy sauce, sugar and 2 tablespoons oil.
    2. In a serving bowl combine the lettuce, bean sprouts, carrot, basil, mint and coriander and toss. Preheat the grill.
    3. Rub the steak with the remaining 1 tablespoon oil and salt and pepper then grill about five minutes a side or until browned but still medium rare within. Let rest a few minutes and then cut into 5mm slices.
    4. Lay the steak slices over the salad and drizzle the garlic dressing over the top. Serve hot.
