Tandoori Chicken Pizza

    This is a great recipe for using up leftover chicken as the tandoori is the sauce not part of the topping like most other tandoori chicken pizza recipes I have tried.

    Makes: 1 pizza

    • 1 thin pizza base or piece of naan bread
    • 2 tablespoons tandoori paste
    • 2 tablespoons yoghurt
    • 1 cup diced chicken
    • 1/4 cup of mint
    • 1/2 cup of mild melting cheese, grated
    • additional yoghurt to serve

    1. Preheat the oven to 220 degrees C.
    2. Lay out the thin pizza base or naan bread. Combine the tandoori paste and yogurt well then spread on the base.
    3. Evenly spread the chicken on the pizza followed by the mint and then the cheese. There is not a lot of cheese in this recipe but you can add more if you desire, as well as additional toppings like cucumber or other flavours associated with tandoori.
    4. Bake in the oven for 10 minutes or until the cheese has melted. Serve hot with additional yoghurt and mint.
