    This is a simple recipe to spice up a baked potato that is equally good as a side, an entree or even lunch. Pizza on the skin of a potato, how could you go wrong?

    Ingredients
    Serves: 4 

    • 2 baked potatoes, halved
    • 1/2 cup of pizza sauce or pasta sauce
    • 1 cup grated cheddar cheese
    • 1/4 onion, thinly sliced
    • 3 mushrooms, sliced
    • 100g diced ham
    • 6 fresh basil leaves, sliced

    Directions
    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Cut two hot baked potatoes in half, spread with the pasta sauce and sprinkle with cheese.
    2. Add the onion, mushroom and ham then top with the remaining cheese. Garnish with the basil.
    3. Place under the grill to melt the top cheese. The bottom cheese will melt from the heat of the potato. Feel free to mix up the toppings.
