Place the turkey in a roasting pan and prick all over with the tip of a sharp knife. Drizzle it with the brandy. Set aside while you make the stuffing.
To make the stuffing, heat the oil and butter in a saucepan and saute the onion, garlic, bacon, ham, olives to taste, wine and water until thoroughly cooked.
In a small bowl beat eggs with parsley and breadcrumbs. Season with salt and pepper to taste then add to the rest of the stuffing mix in the saucepan. Stir well with a wooden spoon until eggs are cooked. Use this mixture to stuff the turkey.
Preheat oven to 180 degrees C.
Season the turkey with salt and pepper, then drizzle with orange juice and 1/2 cup oil.
Cook in the oven for 3 hours, basting it every 45 minutes. If you think it is browning too quickly, cover with foil. Let turkey rest before removing the stuffing and carving.
