Homemade Cafe Style Jelly Slice

    Jelly slice was one of my favourite things to eat growing up! But I could only ever find it in cafes, or my neighbour's house. Making jelly slice at home has been my mission ever since.

    Serves: 4 

    • 250g sweet biscuits, crushed
    • 125g butter, melted
    • 1 can condensed milk
    • 1/2 cup lemon juice
    • 1 3/4 tablespoons gelatine powder
    • 1 cup (250ml) boiling water
    • 85g jelly crystals

    1. Combine the crushed biscuits and butter. Press this into the base of a slice tin. Refrigerate.
    2. Beat together the condensed milk and lemon juice.
    3. Dissolve the gelatine powder in boiling water.
    4. Beat together the dissolved gelatine, condensed milk and lemon juice.
    5. Pour this mixture over the biscuit base. Refrigerate.
    6. Once the lemon middle layer has set, make the jelly according to the packet instructions, but only use half the amount of water. This will make the jelly firmer for easy slicing.
    7. Pour the jelly over the lemon middle layer. Set in the refrigerator for at least 1 hour, or until the jelly is firm.
