This is a scrumptious recipe for corned beef from our "soon to be" daughter in law, Rose. Luckily for our son, Rose is an excellent cook!

Serves: 6 

  • 2 kg Alma Beef corned silverside
  • 1 tablespoons fennel seeds
  • 1 tablespoon whole black peppercorns
  • 4 garlic cloves, whole
  • 2 bay leaves
  • 1 cup or so of white wine
  • 2 carrots, roughly chopped
  • 1 onion, cut into quarters
  • 3 stalks of celery, roughly chopped
  • 1/2 leek, roughly chopped
  • 3 parsley stalks (keep leaves for white sauce)
  • white sauce

Preparation:15min  ›  Cook:3hours  ›  Ready in:3hours15min 

  1. Put Alma Corned silverside into large saucepan or stock pot.
  2. Put all other ingredients into pot.
  3. Cover beef with water.
  4. Bring to boil then reduce heat and simmer, covered, for about 2 1/2 hours or until tender, turn off but leave covered in stock for another 1/2 hour whilst preparing vegies and white sauce.
  5. Serve with your choice of potatoes and vegies and white sauce as below. YUM!!
  6. Handy Hint - Don't throw out stock, strain it, freeze it and use it when you're next making a hearty soup.
