Winter Lime Pudding

    This pudding recipe results in a delicious dessert of creamy lime topped with golden sponge. It's great to make in autumn and winter when limes are in season.

    Serves: 6 

    • 60g unsalted butter, softened
    • 3/4 cup (185g) sugar
    • 3 eggs, separated
    • 2 teaspoons grated lime zest
    • 1/4 cup self-raising flour
    • 3/4 cup (185ml) milk
    • 1/3 cup (80ml) lime juice
    • icing sugar, to garnish

    1. Preheat oven to 180 degrees C. Grease a deep souffle dish.
    2. With an electric mixer, beat butter, sugar, egg yolks and lime zest until light and fluffy. Alternately fold in the flour and milk to make a smooth batter. Stir in lime juice.
    3. In a separate bowl, whisk egg whites until firm. Gently fold egg whites into batter. Pour batter into souffle dish.
    4. Place dish in a baking tin and fill tin with enough boiling water to come 1/3 of the way up the dish. Gently transfer to oven and bake 50 minutes, or until top is golden. Dust with icing sugar and serve with cream.
