Lentil and Rice Pilaf

    This recipe is best if you fry the onions until they are almost burnt. It's very good served with a fresh garden salad.

    Serves: 4 

    • 1 cup red lentils
    • 1 large onion, diced
    • 1/2 cup canola oil
    • 2 cups short grain rice
    • 5 cups vegetable stock
    • 1 teaspoon salt

    1. Place lentils in a large pot with enough water to cover. Boil until cooked, about 10 minutes.
    2. Meanwhile, fry the onions in the oil until they are almost burnt. Add rice, liquid, salt, and the oil and onion mixture to the cooked lentils.
    3. Simmer on low heat with the lid on, stirring occasionally, until the water has been absorbed like risotto.
