Avocado, Asparagus and Smoked Trout Salad

    Both smoked trout and smoked salmon work for this recipe. I prefer smoked trout because it has a milder flavour.

    Ingredients
    Serves: 4 

    • 500g asparagus, woody ends removed
    • 2 fillets smoked trout
    • 100g rocket
    • 150g cherry tomatoes, halved
    • 2 avocados, peeled and sliced
    • 2 tablespoons parsley, chopped
    • 1 cucumber, sliced
    • Dressing
    • 1 tablespoon lemon juice
    • 1/2 teaspoon Dijon mustard
    • salt and freshly ground pepper to taste
    • 60ml extra virgin olive oil

    1. Bring a large saucepan of water to the boil. Cook the asparagus for 1-2 minutes then rinse in cold water. Cut into 3cm pieces.
    2. Break up the smoked fish fillets into chunks and remove any bones. Place in a bowl with asparagus, rocket, tomatoes, avocado, parsley and cucumber.
    3. To make the dressing, combine the lemon juice, mustard, salt and pepper. Add the olive oil and whisk well.
    4. Toss salad with the dressing.
