Citrus and Olive Salad

    This is a great and unusual salad for winter featuring mandarins, oranges, olives, fennel and onions. Try it!

    Serves: 4 

    • 4 large mandarins, peeled and sliced crossways
    • zest of one mandarin
    • 1 handful black pitted olives
    • 1 large red onion, halved and thinly sliced
    • 1 orange, peeled and sliced
    • 1 bulb fennel, trimmed and finely sliced (reserve the tops)
    • 5 sprigs flat leaf parsley (leaves only)
    • 5 sprigs mint (leaves only)
    • 100ml olive oil
    • 1 small red chilli, chopped
    • 1/2 lemon, juiced
    • sea salt and freshly ground black pepper

    1. Combine the olive oil, chilli, lemon juice and salt and pepper to taste to make the dressing.
    2. Combine all the other ingredients in a salad bowl and toss with the dressing.
