There are so many microwave mug cakes out there so it's hard to find one that get it just right - so after a lot of "research" (i.e. trial and delicious error) I have found one that is just right for me. I am much more of a fan of vanilla/yellow cakes rather than full on chocolate cakes but I like a bit of a chocolate hit so I added chocolate chips to this recipe :) To make it slightly on the "lighter" side, this recipe uses sweetner, no-fat milk and wholemeal flour but equal quantities of their regular counterparts will work perfectly too. This recipe will give you a moist cake that isn't too dense but it's like a warm pudding cake texture, which (for me at least!) is delicious. Let's face it - it's a 2min microwave dessert so you probably won't get the perfect light airy sponge texture...if you want that..well, bake a cake!
