Seared Prawns with Cannellini Beans

    This is a fancy entree or appetiser which is easy to throw together. You can find truffle oil at delis, it really does add a special touch.

    Serves: 4 

    • olive oil, for frying
    • 12 large green prawns, peeled and deveined but tails still on
    • sea salt and freshly ground black pepper to taste
    • 3 onion shallots, finely chopped
    • 2 cloves garlic, finely chopped
    • 400g tin cannellini beans, rinsed and drained
    • 1/2 bunch chives, chopped
    • 1 witlof, trimmed and sliced
    • 1 heart of celery, sliced
    • For the dressing
    • 1-2 teaspoons truffle oil
    • 1/2 clove garlic, minced
    • 25ml lemon juice
    • 100ml extra virgin olive oil

    1. Heat olive oil in a large pan over high heat. Add prawns and cook for two minutes on each side. Season with salt and pepper. Add shallots and garlic and cook over medium heat 1-2 minutes. Add cannellini beans and remove from the heat.
    2. Mix dressing ingredients in a small bowl until combined and add to prawn mixture. Add chives, witlof and celery, toss gently and pile onto a platter.
