Vietnamese Fennel Salad

    The ingredients are a bit exotic but if you love Vietnamese food you'll love this salad spiced up with chillies, tamarind and onions.

    Serves: 4 

    • 75ml lime juice
    • 1 teaspoon chilli oil
    • few drops sesame oil
    • 50ml tamarind juice
    • 2 teaspoons caster sugar
    • 50ml fish sauce
    • 1/2 cup loosely packed coriander leaves
    • 1/2 cup Vietnamese mint leaves
    • 2 tablespoons Thai basil leaves
    • 1 small fennel bulb, very finely sliced
    • 3 green onions, sliced
    • 2 green birdseye chillies, finely sliced
    • 1 long red chilli, finely sliced
    • 2 red shallots, sliced
    • 4 wombok leaves, shredded
    • 100g bean sprouts

    1. Combine the lime juice, chilli and sesame oils, tamarind juice, caster sugar and fish sauce.
    2. Toss the remaining salad ingredients together in a bowl, add dressing to coat and serve.
