Cashew and Rocket Pesto

    Toss this pesto through pasta with a dash of cream and some grated parmesan for a delicious and simple meal. Also good with potatoes. Rocket adds a nice bite.

    Makes: 1 cup

    • 100g rocket, chopped
    • 2 handfuls flat leaf parsley, chopped
    • 1 tablespoon capers
    • 1 clove garlic, chopped
    • 100ml extra virgin olive oil
    • 60 grated parmesan
    • 50g roasted salted cashews
    • olive oil, extra

    1. Place the rocket and parsley in a food processor and process until combined. Add capers, garlic and olive oil then process. Add parmesan and cashews and process until smooth. Put in a jar, top with a little extra olive oil, and keep in the fridge up to 5 days.
