    Delicious and easy slow cooker meal. Prawns can be substituted with chicken or any other type of seafood.

    Ingredients
    Serves: 4 

    • half a red capsicum
    • half a red onion
    • dried oregano
    • 1 jar of roasted red peppers, drained
    • 1 can of diced tomatoes
    • 100g feta cheese, crumbled
    • 150ml thickened cream
    • 12 king prawns, cooked and shelled
    • 1 pack of fettuccini pasta
    • parsley, to garnish

    Directions

    1. In oven, roast red capsicum, red onion and oregano with a bit of olive oil.
    2. Add roasted vegetables above with drained red peppers and diced tomatoes to a food processor and blend well.
    3. Place above ingredients into slow cooker along with feta cheese and cook on low for 2 to 3 hours.
    4. Add cream and prawns and cook for another hour. In the meantime boil and cook the fettuccini.
    5. Mix fetuccuni into slow cooker, heat for 10 mins and it is ready to serve. Garnish with parsley.
