The trick to a great potato salad is to dress it while the potatoes are still warm because this helps the potatoes absorb the flavours of mint, oregano and vinegar.

Serves: 4 

  • 6-8 nicola or desiree potatoes
  • 2 Lebanese cucumbers, chopped
  • 6 tomatoes, chopped
  • handful mint leaves, chopped
  • 5 radishes, sliced
  • 1/2 teaspoon dried oregano
  • salt and pepper
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar

  1. Boil the potatoes until cooked through. Drain, peel and cut into largish chunks.
  2. In a bowl, combine the potatoes, cucumber, tomatoes and mint leaves.
  3. Add the radishes, oregano, salt and pepper to taste and the oil and vinegar. Toss well and chill until serving.
