Coconut Cashew Chicken

This recipe was created by my dad, we both love experimenting with food and I really loved this one!

Serves: 4 

  • 6 single chicken breasts, cut into medium sized cubes
  • 2 cups of diced bacon
  • 1 large can of coconut milk
  • 2-4 cups unsalted cashews, depending on taste
  • 1/2 mango, diced
  • rice, to serve

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Fry chicken and bacon in a wok until lightly browned.
  2. Add coconut milk and let simmer.
  3. Add cashews, and thoroughly mix through.
  4. Add mango and stir.
  5. Serve on a bed of rice.


It is really very easy, but mango is not necessary, it just adds flavour. Tastes absolutely amazing.
