Combine 1 cup caster sugar with 1 tablespoon cinnamon. Set aside.
In a bowl, combine the flour, caster sugar and baking powder. Add the egg and milk and whisk until the batter is smooth. The consistency should be like pancake mix.
Cut the bananas on the diagonal into 3cm slices. Lightly dust with flour then coat with the batter.
Bananas:
Heat the 3 cups vegetable oil in a saucepan or wok to a high temperature, about 180 degrees C.
Carefully lower the bananas into the hot oil and cook till golden, about 1 - 2 minutes. Drain on paper towels. Dust with cinnamon sugar and serve.
