Tomato Chickpea Casserole
This is a very simple vegetarian main dish which is super quick to make. Serve with cous cous and some plain yoghurt if you like.

1 onion, chopped
1 teaspoon ground coriander
1 teaspoon cumin
1 tablespoon curry paste, or to taste
zucchini, brocolli, capsicum - whatever veg you have to hand
400g tin chickpeas
900g tin chopped tomatoes
- Heat the olive oil in a deep saucepan and saute the onion for a couple of minutes. Add the spices, curry paste and vegetables.
- Add the chickpeas and tomatoes, and simmer fifteen minutes.
