Chickpea Mash (Passato di Ceci)

This is almost like hummus, but with quite a different flavour. Chickpeas are just wonderful once you know how to prepare them.

Serves: 6 

  • 1 cup dried chickpeas
  • 2 tablespoons lemon juice
  • 2 tablespoons yoghurt
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 clove garlic, crushed
  • salt and pepper

  1. Soak chickpeas overnight. Drain and put into a pot with plenty of water. Bring to the boil for 15 minutes, then reduce heat and simmer for 1 hour, or until chickpeas are tender. Drain.
  2. Mash the chickpeas and stir through with lemon juice, yoghurt, the herbs and salt and pepper.
