There are so many ways you can adapt this rice pudding - add a beaten egg for a custardy flavour, or add any flavourings you like.

Serves: 2 

  • 1/3 cup medium grain rice
  • 2 1/2 tablespoons sugar
  • 2 cups (500ml) full-cream milk
  • flavouring ideas
  • vanilla, cinnamon, nutmeg, honey, raisins as desired

  1. Preheat the oven to 150 degrees C. Grease a baking dish.
  2. Rinse the rice in water. Pour the rice, sugar, milk and desired flavourings into the baking dish and stir. Bake for about two hours. After about an hour, check for dryness and, if in doubt, add a little milk. You will have to break the skin to check the pudding.
  3. Serve warm or cold.
